
Tongola Bloom: Review
It’s goat’s milk cheese from Tassie. The name Tongola derives from the Swiss huts where the makers spent time before they moved to Australia. Tongola Bloom is a white mould soft cheese made from pasteurised milk and vegetarian rennet. Both the paste and rind are white in colour. The rind gives off a smell of flour and floral notes. Good minerality and herbaceousness to the flavour with a hint of dairy in the background. There’s a good balance between sweet and savoury elements and a touch of salt. Nice balanced cheese.
