The Peaks Razorback: Review
A very good washed rind cheese. The Peaks Razorback is an organic cow’s milk washed rind cheese made in Victoria’s Alpine region. The orange rind has a medium intensity fermented smell with elements of sweaty socks and mushroom. All that smell means good things inside. As a result there is a lovely soft even yellow/orange paste that is delivers a very satisfying and full flavour. There’s a lot going on with smokey, fermented, caramel and buttery richness. There are lots of washed rind cheeses made in Australia, and Razorback compares well with them due to its sheer richness. A nice addition to the Aussie artisan pantheon.
