That’s Amore Blue Night: Review
Just look at it. That’s Amore Blue Night is a gnarled washed rind beauty. It that rind wrinkled and twisted coloured in orange and mould bluey greens. With a rind that like it is no surprise that the cheese that its fragrance is intense with a strong ammonia-like component. Cutting though reveals an ivory/yellow paste smooth and gooey in consistency that when tasted has some a a blue cheese’s saltiness, while keeping some natural sweetness and savouriness. Falbour is complex with fungal, dairy and fruity floral elements combined. So, there is a lot going on.
Wine Matching | Wine Pairing
With so much going on in the flavour set tables wine choice might be tough. A safer options will to be to go for a fortified wine like port, or a ‘sticky’ Rutherglen wine. Or see my cheese and wine pairing guide for more options.
