Shaw River Annie Baxter Reserve: Review
Shaw River Annie Baxter Reserve is a pecorino style hard cheese from the south-west of Victoria. Although pecorino-style don’t even think about grating this cheese as it would be an injustice to how good it is. Because it has great flavour and texture and can really needs to be enjoyed on its own merits. Those merits stem from using buffalo milk curd and aging the cheese for 12 months before going to sale. Thankfully, the cheese lacks the flaky texture that comes with some supermarket versions of pecorino-style cheese. Instead, this is a smooth. The smell is intense and a delight. Vegetarian-friendly.
Wine Matching | Wine Pairing
Whisky would be an excellent match. I’d be tempted to avoid white wine with this one, but if I had to I’d go for a chardonnay, or for an alternative grape variety, try Pizzini’s Verduzzo 2019. Red wine? The intensity of this cheese could probably take most red wines, but I thik I’d want a lighter style to let this cheese sing. Try Apis Field Blend, or Dune’s Pyla blend of nero d’avola.
