Section 28 Sunrise: Review
At the time of writing Section 28 Sunrise is an experimental cheese made by one of Australia’s leading and prolific makers of mountain style cheese. This cheese has been washed in a pet-nat style chardonnay wine before being left the age further. The washing gives the cheese a golden rind that smells slightly fermented and nutty. The paste is ivory coloured that turns a light brown as it joins the rind. It is at the firmer end of mountain style cheeses with a nutty flavour.
