Section 28 La Saracca: Review
Enjoyable mountain style cheese made in the style of Italy’s Fontina Vecchio . Section 28 La Saracca is a raw cow’s milk cheese made in the Adelaide Hills. It has a washed rind that provides earthy, forest floor and mushroom aromas. The ivory coloured pastes has a few small holes within and is otherwise even. It tastes nutty with butter and toffee notes. The cheese won 2020 Grand Dairy Awards – National Champion, Semi-hard/Eye Cheese Category under its earlier name, Section28 Fontina
