Pyengana Cloth Matured Cheddar: Review
Award winning cheddar that displays desirable aged characteristics. Pyengana Cloth Matured Cheddar is handmade in Tasmania and aged wrapped in cheese cloth in caves for 12 months. It has a thin rind covering a hard yellow cheese that displays some crystallisation coming from the ageing process. As a result of this aging there is good complexity to the flavours and good range of firmer textures. There are earth aromas, and lovely nutty, caramel and dairy flavours. This is a long way from a typical cheddar found on a supermarket shelf. Delicious platter cheese and certainly not for melting or cooking.

Wine Matching | Wine Pairing
This cheese is powerful and so a full bodied wine is required to match. Try a Bordeaux blend, or a shiraz, or Aussie chardonnay. Scotch and whiskey will do nicely, and I suspect so would a dry sherry.
