Prom Country Black Sheep (Gippsland, VIC)

A delightful cheese. At room temperature shows a range of textures spanning a firm spreadable centre surrounded by a pleasing gooey layer before getting to the outer ash rind. Each element is good in its own right however the interplay between all three is especially good. The rind is not too thick and the amount of ash used just right so that the mix in textures and flavours when spread is oh so good.

Judging by the media I’ve seen about Prom Country Cheese they take a lot of pride in sourcing high quality milk from local producers. From that I can see they have every right to be that proud.
