Nimbin Valley Black Cow: Review

Nimbin Valley Black Cow is a soft white mould cow’s milk cheese that has a layer of ash both through the centre of the paste and also just beneath the white exterior. The dominant flavour here is the rich dairy the comes from the slightly soft yellow inner. The ash is present in the flavour set, but much more restrained compared to other cheeses of this ilk. Enjoyable.

There are many great artisan Australian ashed soft cheeses, New South Wales is home of Hunter Belle Ashed Briebelle, multi-award winning Woombye Ashed Triple Brie, and moving over to buffalo milk there’s Boatshed Cheese ‘Tempest’ Buffalo Brie,

Staying with the same producer, Nimbin Valley make several cheeses. Their Truffled Cow is a divine soft cheese.

Extravagant by L’Artisan Organic: Divine triple cream soft dairy (without the the ash) from Victoria made in the style of Brillat Saverin.

Wine Matching | Wine Pairing

Full bodied white wine such as chardonnay in order to handle the powerful dairy flavour. Or see my cheese and wine pairing guide for more options.

Where to Buy

Can buy direct from Nimbin Valley Dairy who also list their stockists, largely in New Sales Wales. Nimbin Valley do not ship nationally. I bought mine and got it delivered to Victoria using Cheese Therapy’s new online sales portal called Artisan’s Bend.
