Monti Nardi by Nimbin Valley Dairy : Review
Enjoyable semi-hard cow’s milk cheese with a natural rind. Based upon and Italian cheese recipe, Monti Nardi by Nimbin Valley Dairy is aged three months before being put up for sale. The rind gives off an earthy fermented aroma. Beneath is a firm yellow paste that has a rich buttery and nutty flavour. Eating paste and rind together provides a lovely complex flavour experience with good intensity.

Try complimenting the strong dairy flavours with a full bodied white chardonnay or viognier, or choose the acidity of a younger shiraz to cut through dairy.
