Long Paddock Silver Wattle: Review
A very, very good lactic-set soft cheese. Long Paddock Silver Wattle is made from organic cow’s milk in Victoria. The cheese has a lovely fresh smell, and a white/ivory colour alongside a soft texture. The cheese I reviewed was not at all gooey, though I consumed it about four weeks earlier than its best before date so there’s a chance that as it ripens further it may soften further. There’s good salt and acidity in the cheese, along with strong dairy flavour of milk / cream a slight as well as some chalk (though no chalk texture) and a hint a green vegetable.
I thought this cheese was lovely, and the best of the Long Paddock family that I’ve tasted.
