Holy Goat Brigid’s Well: Review
Holy Goat Brigid’s Well is named after a culturally significant site in Ireland where the cheesemaker once worked; In paegan times Brigid was a Celtic goddess and in more modern time is a patron saint in Ireland . This is a ring shaped goat’s cheese from near Bendigo in the central north of Victoria. As a result of the ash within the rind it has mottled grey white colour at the edge. And because of that rind there is a good range of flavours and textures for us! It is a lovely goat’s cheese with a slight crumbly and chalky texture in the central paste that provides a creamy citrus flavour when young and bound to evolve with age. The goat flavour is in corerct proportion and so does not overwhelm with ‘goatiness’
