Coolamon Lactose Free Double Brie: Review
Lactose free cheese? This is not an oxymoron. Coolamon Lactose Free Double Brie is made with cow’s milk using vegetarian-friendly non-animal rennet. The white mould rind has a slightly earthy aroma. Cutting inside revealed a nice range of textures including a gooey centre. The flavours are at the lighter end of dairy….as though it was almost a buffalo milk brie. I found this cheese quite salty, so I figured should be eaten with another foodstuff to cut through the salt. Try a medium bodied wine off dry wine or a sweet one.
The chemistry nerd in me wonders how on earth is a lactose free brie made. Boggled.

Try a medium bodied off dry white like a Soumah Estate vionier that will constrast with teh saltiness of this cheese, or light red such as young pinot noir whose acidity will cut through the dairy. Or see my cheese and wine pairing guide for more options.
