Decent cheese from the Yarra Valley. Coldstream Dairy Gouda is a pastuerised cow’s milk cheese with a washed rind and a hard texture. it has a even consistency though slightly crumbly when cut. It is savourly with both fungal and fermental flavours combining with a dark caramel. It has a long finish with good complexity. Enjoyable and moreish.
